Karamolegou Mystery/19 Assyrtiko Wine White Dry 2018 0.75L
Vinification: Spontaneous fermentation with natural yeasts in the presence of the skins just like in red vinification (skin contact method).Total maceration 19 days and then the wine is left with the whole lees for 10 months. Natural vinification without any addition or intervention during fermentation and maturation except for minimal sulphite only during bottling (total SO2 40mg/lt).
Nose intense, unique, highlighting a different side of Santorini. Botanical hints in the foreground such as chamomile, mint and black tea in the presence of spices such as cardamom and coriander. Mineral notes and fruity hints of pear and bergamot inextricably declare its origins. The mouth is structured, exuberant with the presence of tannins balanced by the fatness and volume of the wine. The finish is long, salty and spicy on the finish.
FLAVOUR COMBINATIONS : intense and ripe gravies, prime fish such as roe and sea bream, roast lamb or even ribs. No doubt it is also an excellent combination with pork but also with various ethnic dishes such as chicken with curry and spicy Moroccan cuisine. Such is its versatility of flavour that we think the list is endless. So we encourage you to make your own combinations too.
