Karamolegos Nychteri Assyrtiko, Athiri, Aydani White Dry Wine 2018 0.75L
Vinification: Only the lees are received from the press and after the leaching, the juice is transferred to the barrels to start the fermentation. High-volume, unburned or medium-burning barrels and a small percentage of 1st use make up the profile of the wood used. Frequent stirring during fermentation and ageing in the presence of whole lees. Total maturation for 16 months. The bottles are marketed after 1,5 years from harvesting in order to highlight the complex and particular character that Assyrtiko acquires during ageing.
Description: Intense aromas combining on the nose nuts with ripe yellow fruits, honey, quince and sophisticated minerality. Rich and oily on the palate with an intense character, our Nykhteri is a pure ''dynamite'' wine with an exuberant body balanced by electric acidity and a long salty finish.
Ageing potential: 8-10 years.
Serving and combining food: Decanting into a carafe is recommended to allow the wine to breathe and open up. Serve at 12-14°C. Exclusively dishes with intense flavours but even so the wine will still be the star of the show. It is a wine that can substitute red in some food pairings. We suggest you to be innovative and try it with pork with orange instead of the more common fish and seafood pairing.
