Winemaking
Harvesting during the night, when the grapes are at their optimum ripeness, aims to preserve the aromatic and phenolic potential of each variety. The correct application of extraction at the pre-fermentation and post-fermentation stages helps to extract this potential. The juice is then transferred by gravity to oak barrels, where it remains for 12 months, while maturing takes 8-10 months in the bottle.

Characteristics of the wine
Attractive purple colour. Complex bouquet composed of aromas of jam, plum, hints of butterscotch and coffee, to end with a subtle background of spices. The palate is distinguished by the balanced marriage of alcohol, acidity and tannins that gives it harmony and volume, while the long finish is dominated by overripe fruit and cinnamon.

Serving recommendations
Ideal serving temperature: 17-18oC. Pair it with meats cooked with spicy sauces, game and yellow cheeses. It is a wine with great ageing potential. The use of carafes is recommended.
