Invivo x SJP Rose (Sarah Jessica Parker) Wine Dry Rose 0.75L

This wine has been made in collaboration with the family estate from Provence, Vins Chevron Villette. The grapes come from the famous "Golden Triangle", located in Saint Tropez, inland between Puget-Ville, Les Arcs and Le Thoronet Abbey, which was built in the late twelfth and early thirteenth centuries. Le Thoronet is known for its clay limestone soil, while Puget-Ville & Les Arcs are of clay-silicate soil.

The grapes had been fermented completely throughout the bunch, with only a few hours of short maceration. This was enough to impart fantastic colour and texture. After soft pressing, the juice was given a cool fermentation in stainless steel and allowed to ferment to near complete dryness. Maturation in stainless steel lees and then texture was added. Malolactic fermentation was prevented to ensure liveliness.
