In the remote villages of Haiti, primitive micro-distilleries produce a drink known as bark from sugar cane juice for local consumption. Naturally fermented using only hot yeast gas and bottled at pot stills, this spirit harkens back to the days before modern distilleries, and is reminiscent of raw rhum farming. Italian independent bottler Velier bought batches of Clairin from a small number of distilleries.
As soon as the bottle is opened, the intense smell of the peel is released. The smells of tropical Caribbean fruits, such as bananas and passion fruit, are the first to come to the fore. Greens, herbs and even roasted sweet potatoes are clearly recognizable to the nose and accompany you during the tasting of the Clairin.
